Baking is my preferred method as well, so easy to clean up, even cooking, yummmmmmm.

Try sprinkling on a bit of brown sugar and cracked pepper before baking...super yummmmmm.

Works very well with the bacon weave too.

I usually cook thick bacon at 400 just to get it done quickly...

I do anywhere from 350-400, depending mostly on the thickness of the bacon--thicker = hotter. I always put the bacon on a rack over a lipped sheet pan.

While I love bacon fat, I don't usually want my bacon swimming in it. The pan makes it easy to pour off after or between batches.

I'm now exploring some German and Hungarian bacons I've found at a local German market. Utterly superb! They come in slabs of roughly 1-lb and are slow-smoked so that they don't need further cooking. Cooking them, though, adds another dimension to the flavors. Absolutely nothing better when used as lardons for salads!

My last bacon baking was Paula Deen's Cheesy Ham and Bacon Casserole last Sunday morning. It was great, but be sure to read all the comments. Some people said it was icky or too slimy, so I'd recommend a cinnamon toast (or plain toast) base instead of plain white bread covered in butter. The chips and cheese and bacon on top was sooo awesome.

i do 350 degrees for 15 minutes. 18-20 min if you want it on the crispier side. definitely middle rack.

i like this idea, definitely trying it tomorrow. how long? anything different in gas oven? middle rack?

I prefer to bake it at 325. I'll sometimes bake it at a higher temperature but I prefer how it gets when cooked at 325. The texture is superb.

Hi Nina! I bake it in a convection oven on top of a rack with a foil covered baking pan below. This way, the bacon isn't sitting in the grease, it just drips down into the tray below. The temp depends on how hungry I am. Slow could be around 325-350 and faster would be around 400 degrees.

Baking is now my preffered way to make bacon. I can prepare more at one time, they all cook evenly and they come out nice and flat - perfect for sammiches!
